Mukimo : The Kenyan Delicacy

MUKIMO is food in Kenya that derives its name from the word `kima’ i.e. mash. ORIGIN-Central Kenya

For the Mukimo, You will need

3 cups of sweet green peas

2 cups sweet corn.

1.5kg Irish potatoes (peeled).

2 bunch of spinach or 1pack 4oz baby spinach.

1 tbsp garlic powder.

1 bunch spring onions, chopped 

3 tbsp butter or margarine

1/2 cup milk.

Salt to taste

4 cups water for boiling.

Lets cook!

Add the water to the potatoes and boil. Sprinkle two pinches of salt in the boiling potatoes, boiling until the potatoes are soft. Drain the liquid, in a separate pot boil the sweet peas till soft,then drain and blend with the chopped spinach. Boil the sweet corn for 5mins drain and add it the mash potatoes together with the sweet peas puree. Add the butter and milk and mash the mixture.Heat the oil add onions, garlic and cilantro. Fry for a minute.Add the mashed mixture and mix well with the fried onion and spices. Mash it all up together and let it cool for 5mins. Serve hot with stew or sauce.
