Bhajias – Perfect dish for a sunny day on a weekend with your family and friends. Try out this easy recipe and you will thank me later.
Ingredients
7 big potatoes peeled and sliced
1 onions sliced
1 bunch coriander (dania)
Salt to taste
100g gram flour
100g wheat flour
1/2 tspn baking powder (makes it crispy)
Half a cup water
1/2 liter Vegetable oil to fry
Sweet Mango Dip
1 ripe mango
4 lime juice
4 hot green chili pepper
Thick tamarind extract
Salt to taste
Method
Cut the potatoes into thin slices put into a bowl add in the sliced onions, roughly cut coriander and salt. Sprinkle the wheat flour, gram flour and baking powder on the potato mixture add in the water. Give it a good mix with your hands until the flour is well coated on the potatoes. If you feel like the mixture is too thick you can add more water to get the desired coating consistency.
Preheat the vegetable oil in the deep frying pan and bring to a medium heat. When it’s hot enough, fry the coated potatoes ensuring you are dipping one by one so that they don’t stick to one another and form layers of potatoes. You don’t want that trust me, because they won’t cook perfectly.
Let it cook until the potatoes get a slight golden shade and coating becomes crispy then remove and place on a perforated stainless steel bowl to drain access oil.
For the dip: peel and cut the mango, put in the blender with all the ingredients and get a nice blend out of its taste and seasoning. I love the sweet and sour combination from the mango, tamarind and lime juice. More so, the chili and salt compliments the entire Experience in the palate.
Serve with the dip in a bowl and dip the bhajias as you enjoy eating this fun and simple treat.
