Chef Ali Mandhry : Grilled Fish in Coconut Sauce

Grilled Fish in Coconut Sauce- Samaki wa kupaka

Ingredients

1 whole fish
1 tablespoon Garlic ginger paste
1 tablespoon green chilli minced
½ teaspoon garam masala
1 lime squeezed
salt to taste

Coconut sauce

1 onion chopped
1 tomato chopped
1 ½ cup thick coconut milk
1 teaspoon tomato paste
½ teaspoon turmeric powder
2 hot chilli (pilipili mbuzi)
1 lime squeezed

Method

Marinate your fish with garlic ginger paste, chilli, garam masala, lime juice, and salt to taste. Grill the fish using a charcoal grill for the best flavour turn to cook on both sides.

Blend onions, tomatoes with the coconut milk add in the hot chillies as you desire then pour in a clean pan add in the turmeric powder, tomato paste, salt and cook at low heat when the sauce starts to thicken add in the lime juice cook until very thick then for the best taste you want to pour the sauce on the fish while the fish is on the charcoal grill on both sides when the sauce drops on the charcoal the fish will be smoked and give you the best flavour.

Serve the fish with lime slices on the side.
