Chef Ali Mandhry : Chutney Masala Recipe

Great people a delicious recipe of my favourite Chutney masala to go as a boost for your favorite pilau, biryani or any meal that you fancy with a side punch.
10 hot green chili chopped (Pilipili mbichi)
4 ripe tomatoes diced
50g tomato paste
1 teaspoon Garlic minced
One onion finely chopped
1 green/unripe mango sliced
4 tablespoons lemon juice
3 tablespoons oil
1 teaspoon sugar
Pinch of salt to taste
Pour the oil in a sauce pan over medium heat Saute the garlic and onions until golden brown add in the tomato, mango and hot green chili stir until slightly mashed then add in the tomato paste and lemon juice finish off with sugar and salt to taste let it Cook until thick and you can see the oils bubbling up on the sides of the pan. Preserve in a tight container store in the refrigerator for up to one month.
